She and Galen are doing their part. In partnership with Reef Capital, they completed the transformation of Union Plaza earlier this year and launched two new eateries, Le Depot Brasserie and Union Patisserie, expanding the Galen Hospitality Group. “The building served Park City for 100 years before closing in 1976,” Katie says, delighted to write a respectful new chapter at the historic site. Le Depot showcases classic French cuisine, while Union Patisserie shifts from daytime coffee-and-pastry hub to chic evening wine bar.

Katie’s own influences blend a New Orleans childhood with twenty years in New York City. “The New Orleans culture of hospitality and food is in my DNA, and now my daughter is at LSU, so I’m part of it again, seeing it through her eyes.” New York’s tastemakers deepened her appreciation for fashion “and left me mildly allergic to repeating outfits,” she laughs. “Thank goodness for RE Consignment and all the boutiques on Main!”

At home, Louisiana often rules the table. “I could eat crawfish for hours,” she confesses, often flying in live crawfish for meals that are “all about good friends, good stories, and lots of laughter.”

That’s the same cozy, welcoming spirit she and Galen bring to Le Depot and Union Patisserie—Park City’s newest beacons of spirited, palate-pleasing dining.
